Simply the best banana bread

Allow me to jump on the banana bread bandwagon here and share my favorite banana bread recipe!


Banana bread has become one of the baking superstars of the year, thanks to all of our time at home and our need to not waste a thing in the kitchen.


Below you will find my go-to banana bread recipe - it's one I found on Pinterest years ago - and it's delicious and simple to make! I use overripe bananas from my counter or the ones I've stashed away in the freezer.


My kids and I enjoy making this recipe and sharing mini loaves with neighbors, friends and family. I continuously try to find healthier banana bread recipes - and I often try new ones - but I always resort back to this tried and true and oh-so-good recipe....enjoy!




Cinnamon Swirl Banana Bread


For the bread:

3 overripe bananas

1/3 cup melted butter

3/4 cup sugar

1 egg, beaten

1 tsp vanilla

1 tsp baking soda

dash of salt

1 and 1/2 cups flour


For the swirl:

1/3 cup sugar

1 Tbs cinnamon




  • Preheat the oven to 350. Butter or spray loaf pans (either one 9x5 or a few mini loaf pans, which I love to use)

  • Mix bananas, butter, sugar, egg and vanilla together. Sprinkle baking soda and salt around the top of the banana mixture, then gently stir in the flour. Be careful not to over-mix.


  • In a small dish, mix together the 1/3 cup sugar and 1 Tbs cinnamon. Set aside.

  • Add 1/2 of the batter to the loaf pan(s) and then sprinkle some of the swirl mixture all over the batter in the pan. Add the rest of the batter and then sprinkle the leftover cinnamon-sugar on top.

  • Bake for 50-60 minutes for the larger loaf pan or 30-35 minutes for the small loaf pans. Keep a close eye on the breads. Just as soon as a knife comes out clean from the center of the breads, they are ready to cool.



You can also try using Nutella inside your banana bread rather than the cinnamon-sugar mix... if Nutella is your jam. Just dollop a spoonful in the middle of your batter and spread, and dollop some on top of the batter too.


No matter what kind of banana bread you make, you can always add mini chocolate chips or nuts to the batter!


I always double the recipe and it makes four full mini loaves.
